I have been hunting for way to improve my protein intake. In general, I’m not a bad eater. Ok, I have my weaknesses, but I’m not a disaster. And I think a lot of people fall into this category. I eat well, but I don’t properly fuel my body. I eat a ton of vegetables and fruit and whole grains, but I lack in protein. In an effort to improve upon this, I’m doing more meal planning and in particular, breakfast planning. I can totally survive on a coffee and a granola bar, but I’m hangry by noon. This recipe for protein waffles/ pancakes is easy. Make a bunch, freeze them and toast them up for breakfast [like Eggos, but without the artificial ingredients and packaging and sugar].
Protein Waffles
1 tsp Cinnamon
1 tsp Vanilla Extract
1.2 cups Milk (almond or regular)
2 Tbsp Macadamia Nut Oil (or Canola Oil)
61.5g Vanilla Whey Protein Powder
1 Large Brown Egg
1.2 cups Pancake Mix (use what you have/like – reg, gluten free, whole wheat)
- Combine all ingredients in a bowl and mix well. Make waffles or pancakes to your liking. These cook up just like normal pancakes or waffles would.
- Cool and freeze for future use or enjoy hot.
These are fluffy and golden and hearty. I like to double or triple this recipe to make bulk batches. 1 recipe makes approximately 3-4 large waffles. Also try adding to the recipe – chocolate chips, blueberries, nuts. I top mine with peanut butter for an even better morning boost.
