Refrigerator Pickles

I have been getting loads of veggies from my CSA this Summer and we are LOVING IT. Part of the fun is we are forced to get creative in order to use up or preserve some of this produce because if we don’t, it goes to waste. Aint nobody got time for that.

Cucumbers are hard to eat in bulk. After about ten salads we get sick of them. When salads are out, I use THIS RECIPE by Marisa McClellan (one of my favorite people ever) for a good quick pickle and it is awesome. The recipe requires only a handful of ingredients and no cook time.  At the end of the season I will jar pickles to keep for the Winter, but for now the Refrigerator Pickle is my go-to for a quick, they’re-gonna-go-bad-if-we-don’t-do-something save. I used my favorite wide mouth Ball Jars for the spears – makes it easier to back them in and get them out. Also, try using reusable mason jar lids for these; no fuse with the dual cap when you keep opening the jar and eating these from the fridge! 😉

I’m thinking of venturing into pickling other vegetables next… maybe zucchini? kohlrabi? Who knows. What are you guys doing with all of your CSA vegetables?
